Beef Stroganoff (Ref.5): I took on this recipe as one of my first challenges to meet both calorie and G.E. constraints. It worked out on paper, but would it play to the diabetic gourmet? I tried it out once, twice, and now several times, and always it met the criteria of taste and diabetic performance. It is truly a wonderful dish just like the original. |

| Steak, sirloin or tenderloin | 1 lb. | 1 lb. |
| Flour, all purpose | 2 Tbsp. | 2 Tbsp. |
| Sour cream | 8 oz. | 2 oz. |
| Cottage cheese, creamed | -- | 2 oz. |
| Water | 1/2 cup | 1/2 cup |
| Margarine | 2 Tbsp. | 2 Tbsp. |
| Beef bouillon granules | 2 tsp. | 2 tsp. |
| Mushrooms, fresh sliced | 1 1/2 cups | 1 1/2 cups |
| Salt | 1/4 tsp. | 1/4 tsp. |
| Garlic, minced | 1 tsp. | 1 tsp. |
| Pepper, black | 1/4 tsp. | 1/4 tsp. |
| With hot noodles or rice | 1/2 cup | 1/2 cup |

Partly freeze beef. Thinly slice across grain into bite-size strips. Combine flour, pureed cottage cheese and 5 ounces of water. Stir in bouillon, sour cream, 1/2 cup water, salt and pepper. Set aside. In a large skillet, stir half of meat in margarine on high heat until done. Remove. Add rest of meat, mushrooms, onions and garlic. Cook and stir till meat is done and onions are tender. Return all meat to skillet. Add sour cream-cottage cheese mixture. Cook and stir over medium heat until bubbly. Cook on reduced heat with stirring for 5 minutes more. Serve over rice or noodles.
