The author is also a victim of diabetes, but instead of allowing his affliction to get the best of him, he decided to fight back - scientifically. When the doctors suggested he would probably have to go on insulin, he decided there must be a better way. Being a chemical scientist he started from the beginning and noted every single thing he ate. He related the effect of each food item on his sytem to its chemical composition, and soon a pattern emerged. He found that some of the sugars were bad and others were not. So in tabulating the sugar composition of all the basic foods, he evolved a relationship between food composition and its effect on the diabetic.
In two months his blood glucose had returned to normal and, with the approval of his physician, he stopped taking his medication. Since that time, he has been medicine-free for over ten years, with normal blood glucose levels. He absolutely believes in and practices what his books teach, having created the guidelines from scratch and wanted to share them with others who suffer from this same affliction.
As a retired scientist with over one hundred patents and numerous publications, books and chapters in monographs, he stands behind his over 500 scientifcally sound recipes. His first book on the subject, DIABETES CONTROL: DIABETICS AT TABLE, presents the facts as they occurred, step-by-step, from the depths of the initial diagnosis of diabetes to its successful control. In his second book, DIABETES CONTROL: COOKBOOK AND DIET GUIDE FOR DIABETICS, he concentrates on recipies that everyone, whether diabetic or not, can use. This way, the whole family can eat from one delicious meal, and enjoy!
Friends are using the cookbook to lose weight, which is a marked advantage to one's overall health. Prominent physicians find the book useful for patients with ongoing diabetes, those threatened with its potential onset, and those who are normal at present but with a history of diabetes in the family. If you have the threat of diabetes or want to control weight in a safe and wholesome way, by all means use the cookbook. If you are on diabetes medication, use it with your physician's knowledge so he can adjust dosages as your blood sugar drops to normal.
The author lives in St. Charles, Illinois with his wife Rita. His six children (including six grandchildren) are scattered throughout the country and have all eaten his recipes and enjoyed them. Everyone knows that when they come to the Jezl home for a meal, expect to eat diabetically and well.
